home-made & healthy {sweet potato beef stew}

Nick wasn’t a big fan, but I rather enjoyed the homemade beef stew I made with sweet potatoes earlier this week. Had extra potatoes before I put them in the stew, so I went ahead and mashed them for Madi–we’ll try those tomorrow!

In case anyone wondered, I used 2 pounds sirloin tips, 2 cups broth (chicken was the only one I had and it tasted fine), and 2-3 large sweet potatoes (I boiled them first to make sure they were tender) in the slow cooker for 6 hours on high.
