home-made & healthy {mashed sweet potatoes}

imageThis weekend I made sweet potatoes for pretty much the first time ever. I’ve had them before, but never really cared for them. I asked a few friends how they would recommend making them, and the general consensus was to bake them at 400 degrees. So that’s what I did. I peeled and cut up the potatoes, drizzled them with EVOO, and spiced them up (with Tastefully Simple’s Seasoned Salt). Baked them for about an hour, until they were soft, and then mashed them up. They are AMAZING!! Can’t wait to play around with sweet potatoes a bit more and see what else I can come up with 🙂
