my first ever salad


Okay, I decided I could start my 2-week vegetarian diet early. So when I got home from the grocery store, I made up a salad. This is the first salad I have ever had. Obviously it’s not my first time with these vegetables, but it is the first veggie-based meal I’ve had.

Here’s my first mix:
-shredded carrots
-grape tomatoes
-feta cheese
-a hard-boiled egg
-red onion
-some cheese and garlic croutons

It was a little dry, but I think that it doesn’t make sense to add a dressing–defeats most of the healthy aspect. I’m going to try some lemon or lime juice in the future to moisten it up. And for added flavor. And I might try some fruit like strawberries or apples in the mix.
